Bourbon Ginger Chicken

Easy to make & delicious, this Bourbon Ginger Chicken has a sweet taste, but not as sweet as you would think. The ingredients all mix together nicely to create a delicious glaze type sauce.

Ingredients:

-12 skinless boneless chicken thighs

-1/4 cup fresh grated ginger

-1/2 cup Jim Beam Apple Bourbon

-1/2 cup Jack Daniels Bourbon

-2 tbsp of honey

-2 tbsp pure maple syrup (Imitation Maple Syrup won't work with this recipe)

-1 tbsp rice wine vinegar

-1 cup brown sugar

-1 tbsp corn starch

- 1 cup water

- 1 cup chopped scallions

- 1/2 clove grated fresh garlic

- 2 tbsp olive oil

- Sea S&P

Preperation:

1-In a pan saute the thighs (sprinkled with S&P) in olive oil until slightly brown & then remove from heat & set aside allowing the thighs to drain in a seperate plate.

2- In a bowl wisk the ginger, the apple bourbon, the bourbon, the honey, the maple syrup, the vinegar, the brown sugar, the garlic & 1/2 of the chopped scallions.

3- In a seperate bowl dissolve & wisk the corn starch & water & then add to the bowl with the bourbon mixture & wisk again.

4-Now pour the mixture into the pan (make sure to pour all of the corn starch from the bottom of the bowl as it tends to settle ) & simmer over med heat (about 3-5 mins) continuously stirring until it starts to thicken into a sauce.

5-Once the sauce is thick & simmering, place the chicken thighs into the pan, mixing with a spoon to coat the thighs well with the sauce & heat on low for 3-5 minutes.

6- Serve over white rice with broccoli or string beans & pair with a glass of white wine like Smoke Eater Pinot Grigio. ENJOY!
