YOU GOTTA LOVE A GOOD CUBAN!
Especially a Cuban sandwich prepared with a maple chipotle crusted pork loin roast paired with Smoke Eater Pinot Grigio!
1-Preheat oven to 375 degrees.
2-Add 1/2 cup of water to the bottom of a roasting pan.
3-Score the fat on top of the pork roast with a sharp knife.
4-Combine 1/2 cup of a natural maple syrup with 2 tablespoons of brown sugar and 1 tablespoon of Chipotle sea salt in a bowl and mix well.
5-Rub or brush the maple mixture over the top of the scored roast and place the roast on top of a metal grate in the roasting pan.
6-Place pork roast in oven and cook for 15-20 minutes per pound or until the roast reaches an internal temp of 160 degrees.
7-In another bowl add 1/4 cup of honey, 1/4 cup of dijon mustard, 1/4 cup of mayo & 2 rounded tablespoons of a good quality smoked paprika.
8-Let the pork rest for 5 minutes and then cut into medium slices while still hot.
9-Layer the pork slices on a good quality semolina bread and cover with enough slices of swiss cheese to cover the pork, then drizzle the honey mustard mixture over the swiss cheese.
10-Add a few slices of ham sliced thin & a good deli quality, sliced, half sour or dill pickle (whichever you prefer).
