Healthy Turkey Chili

Healthy & Delicious, this turkey chili is a one pot meal perfect for a cold winter day!

Ingredients:

-1 tbsp olive oil

-3 lbs ground turkey

-2 cups chopped yellow onion

-1 lg red bell pepper chopped

-1 jalapeno pepper chopped

-1 tbsp fresh oregano

-1 bay leaf

-3 tbsp chili powder

-2 tsp ground cumin

-1 tsp cinnamon

-1 tsp butter

-3 cups canned diced tomatoes

-1 cup tomato paste

-2 cups chicken broth

-1 tsp Sea Salt

-1 tsp ground pepper

-2 15-ounce cans of white cannellini beans drained

-1 15 oz can of sweet corn drained

-1 cup sliced carrots

-1 lg sweet potato

-2 cups shredded cheddar cheese

-2 cup sour cream

-2 cups white rice

-Sliced lime for garnish

Directions:

1- Bake the sweet potato at 450 degrees for 45 minutes.

2- When the potato is done, peel off the skin, mash it together with the butter & cinnamon & set aside.

3- In a large sauce pot, saute the turkey meat in the olive oil & cook until lightly browned making sure to seperate all of the meat leaving no lumps. 4- Next, add the onions, red pepper, corn, jalapeno pepper, oregano, bay leaf, chili powder & cumin & cook for 5 minutes while constantly stirring.

5- Add the tomatoes, tomato paste, mashed sweet potato, chicken broth, salt and pepper, bring to a boil, reduce heat & simmer, stirring occasionally, for 15 minutes.

6- Add the drained beans and cook, stirring occasionally, for another 10 minutes.

7- Serve in bowls over rice, garnished with cheddar cheese, sour cream & lime wedges.
