Healthy Turkey Meatloaf
This Healthy Turkey Meatloaf is easy to prepare & unlike most turkey meatloaves, it is juicy & delicious if you follow the preperation instructions.
- 3 lbs of ground turkey meat - 1 1/2 cup grating cheese
- 1 peeled & chopped zucchini - 2 cups chicken stock
- 1 chopped red bell pepper - 3 eggs
- 1 chopped med yellow onion - Sea salt & pepper
- 3 cups of chopped mushrooms - 2 tbsp olive oil
- 1 clove of garlic (whole) - 1 1/2 cups gluten free bread crumbs
- 2 tbsp Italian seasoning - 2 cups of marinara sauce
1- In a pan, in 1 tbsp of olive oil, saute the mushrooms, onion, zucchini, red bell pepper & garlic over med heat until the all of the veggies begin to soften & then add 1 cup of the chicken stock & simmer on low until most of the stock has evaporated.
2- In a large bowl add the sauted veggies (minus the garlic clove) into the turkey meat & then add in the eggs, the Italian seasoning, the grating cheese, bread crumbs, sea salt & pepper, 1 tbsp of olive oil & 3/4 cup of marinara sauce, hand mixing everything together.
3- Now form the mixture into a loaf & place in a roasting pan, adding the remaining chicken stock into the pan around the sides of the loaf to keep the loaf moist & then spred the remaining marinara sauce over the top of the loaf .
4- Bake at 375 degrees F until the loaf reaches an internal temperature of 165 degrees (usually about 1 to 1 1/2 hours depending on the oven.
5- Serve over rice or risotto with a kale salad & pair with a glass of chilled Smoke Eater Pinot Grigio!
Easy Kale Salad- In a bowl combine de-stemmed Kale leaves, olive oil, juice & zest of 1 lemon, sea salt, ground pepper & white sesame seeds. Toss or shake all together & enjoy!
