Rosemary & Lemon Greek Chicken

Ingredients:
-6 to 8 chicken thighs
-Fresh rosemary
-Saratoga Extra Virgin Olive oil
-Saratoga Sea salt & pepper
-2 Lemons
-1/2 clove Fresh Garlic
-1 cup Greek Yogurt
-2 tbsps Fresh Dill
-1 tsp Fresh Thyme
-1/2 English Cucumber
Preperation:
1-Place the chicken in a roasting pan, drizzle with olive oil & the juice of one lemon & then sprinkle with the sprigs of the fresh rosemary & roast in the oven at 350 degrees F for 1 hour or until the thichs reach an internal temperature of 180 degrees F.
2- Peel & grate the cucumber into a bowl, then squeeze & drain the excess juices.
3-The Tzatziki Sauce: In a bowl combine the drained cucumber with the yogurt, the dill, the thyme, the juice of 1/2 lemon with sea salt & pepper to taste. Then press in the garlic & drizzle Saratoga extra virgin olive oil over the mixture stir together well until all ingredients are blended together.
4-When the chicken is cooked, allow to rest for 5 minutes & serve with the tzatziki sauce.
5-Pair with a light white wine like Smoke Eater's Pinot Grigio imported from Friuli Italy. Enjoy!
