Smoke Eater "All Hands" Easy Chicken Burrito
This easy easy easy, very easy Chicken Burrito recipe using Smoke Eater Gourmet Meats "All Hands" Boneless Chicken Breast was delicious & is easy to make. It is basically (not including the rice) a one pot meal which is very easy to make. I would also like to mention that this meal is very easy to make!
-1 1/2 lbs of Smoke Eater Gourmet Meats "All Hands" Boneless Chicken Breast cubed
- 3 tbsps olive oil
- 14 oz can of diced tomatoes
- 2 cups of canned black beans, drained & rinsed
- 1 1/2 cups of chicken broth
- 1 cup of frozen corn
- 1 green bell pepper, chopped
- 1 jalapeno, de-seeded & chopped fine
- Sea salt & pepper
- 1 tsp chili powder
- 1/4 tsp garlic powder
- 1 tbsp cumin
- 1 tsp cayenne pepper powder
- 1/4 cup chopped scallions
- 1 cup Sour Cream
- 2 cups shredded cheddar cheese
- Nashville Heat Sweet Smoked Chipotle Hot Sauce
1- In the bottom of a sauce pot, over med heat, saute the chicken sprinkled with the sea salt & pepper in the olive oil until the chicken turns white (5 to 10 mins)
2- Next, add in the chicken broth, the diced tomatoes, the black beans, the corn, the green & jalapeno peppers, the chili powder, the garlic powder, the cumin & the cayanne powder & cook over med heat for 1 hour, frequently stirring.
3- Serve over rice, with a dollop of sour cream, sprinkled with the shredded cheddar cheese & garnished with the scallions.
4- Pair with Smoke Eater "All Hands White" Pinot Grigio!
