Veal Scallopini
This Veal Scallopini is a very quick & easy to make delicious recipe using only a few ingredients.

Ingredients:
- 8 veal cutlets cut into 2" medallions
- 1 cup of flour
- 2 tbsp olive oil
- 2 tbsp butter
- 1 finely chopped shallot
- 1/2 clove of pressed garlic
- 3 fresh diced tomatoes
- 1 cup of a good port wine
- 1 cup of lite cream
- sea salt
- pepper
- 1/4 cup fresh chopped parsley
Instructions:
1- Lightly dredge the veal medallions through the flour & set aside.
1- In a skillet, over med heat, saute the shallots, tomatoes & garlic in the olive oil & butter until onions are soft.
2- Stir the port wine into the mixture & allow to reduce & then remove the mixture into a bowl & set aside.
3- In the same pan, add in the veal & quickly saute each medallion no more than 2 or 3 minutes & then remove the veal and set aside.
4- Over med/low heat, add the tomatoe mixture back into the same pan again bringing to a simmer & then stir in the lite cream.
5- When the cream starts to bubble, add the veal back into the pan for another 2 to 3 minutes & serve over your Veal Scallopini over rice or pasta sprinkled with parsley.
