Tuscan Chicken

Rich & flavorful, this Tuscan Chicken is an easy one pot meal.

Ingredients:

- 8 skinless boneless chicken thighs. - 3/4 cup of crumbled goat cheese

- 3 tbsp Saratoga Basil Olive Oil - 1 cup of milk

- 1 tbsp butter - 1/2 cup sundried tomatoes

-2 cloves of garlic minced - 1 14.5 oz can of diced tomatoes

- 1 cup heavy cream - 1/2 cup of feta cheese

- 1/2 cup of chicken broth - 1/4 cup kalamata olives

- 3/4 cup grated parmesan cheese - 1/4 cup of pine nuts

- 1 1/2 tbsp Italian seasoning - 1 tbsp sea salt

- 1 1/2 tsp crushed red pepper flakes - 1/2 tbsp black pepper


Directions:

1- In a blender or a bullet, combine 2 tbsps of the olive oil, 1 clove of the garlic, 1/2 tsp of the Italian seasoning, 1/4 cup of the goat cheese, the milk, the sundried tomatoes, the diced tomatoes, a pinch of the sea salt & pepper, the feta cheese, the olives & the pine nuts & blend together.

2- With the exception of the remaining goat cheese, add the chicken & the rest of the remaining ingredients into the crockpot & then pour the mixture from the blender over the top of everything & cook on high for 4 hours, or for 8 hours on low .

3- Once everything is cooked, add the remaining goat cheese crumbles to the top of the meal & cover until the cheese melts & then serve over your favorite pasta, paired with Smoke Eater "All Hands White" Pinot Grigio, imported from Fiuli Italy & Enjoy!
